Crab Ceviche

A perfect little appetizer or a heart healthy meal. Crab ceviche is perfect for every occasion. A simple easy recipe featuring both Jonah crab meat and Red Crab meat. Can be eaten with or without chips
This recipe is for 2lbs of crab meat. We personally at Atlantic red crab like it with both the red and jonah but feel free to use what ever crab you like.
9 Roma Tomatoes - small dice. Cut and drain liquid
1 small red onion - small dice
1 English cucumber - deseeded, small dice
1 red bell pepper - small dice
2-3 jalapenos or chilis - deseeded, minced
3 garlic cloves - minced
2 bunches of cilantro - chopped
8 limes juiced
2lbs crab meat - pick through to make sure no shells
Salt and pepper - to taste
Once everything is chopped, mix all together ensuring lime juice is thoroughly mixed through.
If you are planning on making it earlier than serving it, some people recommend keeping the cucumbers out. That way you can add them when you serve it to keep them crisp
